SPECIFICATION

Raw material: Indigenous Ginger, dried, unpeeled rhizome of Zingiber official Roscoe

Source: Ethiopian (African)

Appearance & odour: In pieces, irregular in shape or in small cut pieces, very pale buff to pale brown in colour fibrous, shall not have a musty odour or rancid or bitter taste. Free from moulds, insects & insect fragments & rodent contamination visible to the necked eye.

Moisture content: 12% w/w, max

Volatile oil content: 2-3% on dry basis

Package: New p.p bags or jute bags

Storage: in a cool, dry place

TURMERIC FINGER

Turmeric Finger

SPECIFICATION

Description: Ethiopian whole turmeric, is the cured primary or secondary rhizomes, called commercially bulbs or fingers, of Curcuma domestica L. The rhizomes are dried, well developed and have the shape and typical colour of the variety. The rhizomes are cured by soaking them in boiling water and then drying them to avoid regeneration.

Odour and flavor: Turmeric has the characteristic odour and flavor of the spice. It is free from mustiness or other foreign flavors.

Chemical Requirements: Moisture content: 6%
Colour power (% curcumin): 4.8%
Volatile oil content (v/w): 2.3%

Package: New p.p or jute bags.

Storage: Store in a cool place protected from light, rain & excessive heat.
